Mo’ Betta Tuna Salad - Low Carb Recipe

Ingredients :

1 can of Wild Planet Pole Caught Tuna or 1 Packet Starkist Tuna in Extra Virgin Olive Oil
1 Heaping Tblsp Artichoke & Red Pepper Tapenade (Trader Joes) or any tapenade
1 Celery Stalk  -diced (or 1/4 green pepper diced)
1 - 2 Tblsp Mayonnaise (preferbaly organic, non-GMO)
1 Tsp Yellow or Stone Ground Mustard, I like Annie's Organic
1 Tblsp Capers
1 - 3 Tsp Flax Oil or Udos Choice Oil Blend
Salt & Pepper

Directions :

Dice celery and place in a bowl.  To the celery, add the tuna, tapenade, mayo, mustard, capers, salt, pepper, Udos oil and stir to mix.

Serve on a bed of lettuce or with celery sticks.

Carbs per serving : 3g net carbs

Notes: This is one of my favorite tuna salads.  Takes about 3 minutes to make.  The tapenade is great and very low carb.  I use the one from Trader Joe, but there are others out there in regular grocery stores. I also use organic non-GMO mayo or the mayo from Trader Joes which has no artificial preservatives. The starkist tuna packed in olive oil is also preservative free (just salt). But Wild Planet pole caught tuna is a VERY tasty tuna worth trying.

You could also add a hard boiled egg, crumbled bacon, shredded parmesan, parsley, a squirt of lemon juice, etc. 

The flax / Udos oil is something I add to increase the Omega 3 fatty acid content.  So it’s not only a better tasting tuna salad, but it’s a better for you tuna salad. Please note: flax / Udos oil needs to be refrigerated and not heated. It does have a strong taste, so just keep that in mind.
