Morning Scramble - Low Carb Recipe

Ingredients : 

1/4 lb Ground Beef
2 Eggs
Handful of Spinach or Lettuce
1/2 Tsp Salt
1/8 onion (1.5g of carbs)
Cheddar or Parmesan Cheese

Directions :

In a skillet, heat a little oil and add beef, salt, pepper and onions. Cook until beef is brown.

Add spinach or lettuce and allow to wilt.

Then add in the 2 eggs and scramble them into the mixture – Stir until eggs are cooked.

Top with shredded cheese.

Difficulty : Easy
Makes : 1 Serving
Carbs per serving :  <2g of net carbs

Notes : Quick and easy meal. Takes about 8 – 10 minutes to make.  Scrambles have become one of my go to meals when I don’t feel like cooking anything more elaborate.  One pot, low carb, easy, quick  & tasty. This is a variation of Eat at Joes in Marin.
