Mashed Cauliflower - Low Carb Side Dish

Ingredients :

2 cups of Cauliflower
4 Garlic Cloves - diced
1 Tblsp Butter
1/2 Tblsp Olive Oil
Salt & Pepper


In a sauce pan over medium-high heat, add the cauliflower and a splash of water. Bring to a steam. Then cover reduce heat to low and let steam until cauliflower is extremely tender (knife slides easily in-out).

In a skillet, add the oil, butter, salt and pepper, and garlic and over low heat - just allow the garlic to infuse in the butter (pretty much just let it sit in the butter/oil).

Once the cauliflower has been steamed, pour out any leftover water from the pan and add the garlic butter to the cauliflower and with a potato masher (or spoon or fork), mash the cauliflower thoroughly. Adjust seasoning as necessary.

Makes : 1 Serving
Carbs per serving : 6g of net carbs

Notes: This is just the basic recipe. You could also add sour cream, cheese, bacon, onions, more garlic, crushed red pepper, fresh herbs, heavy cream, etc. That'll be the fun part, trying different combos. I don't use milk in low carb recipes, because it's simply too high in sugar.
