Fried Eggs and Sausage - Low Carb Recipe

Ingredients:

2 – 3 Eggs
1/2 Tblsp Butter
1 Sausage Patty or 2-3 Sausage Links
Salt & Pepper

Directions:

In a non-stick skillet, add the sausage over medium heat.  Allow the sausage to cook for several minutes one each side until it’s browned. If using frozen sausage, then add a splash of water to the skillet, cover and allow to steam for a couple minutes. Allow to brown.

Add the butter and allow to melt, then add crack the eggs into the skillet and fry the eggs.  While cooking, add a dash of salt and pepper.  I like over-medium, where the egg whites are cooked through, but the yolk is still runny.  So I just flip the eggs once during cooking.  Eggs cook fast, it only takes a few minutes.

Notes: When choosing a sausage, I prefer to use frozen sausage that has no preservatives. This should be found in your grocery's freezer section. I like the Jones brand, it's mild.

Occassionally, I'll eat a regular sausage like Hillshire Farms, which offers a totally different flavor profile, but because of all the preservaties, I don't do it all that often.
